Does anyone know what this is?

I’m a 21 year old healthy male, only slightly overweight. My health history: My diet isn’t perfect, but it’s not 100% fast food either. Prior to my problem I was consuming cheap Franzia box wine almost every night.
I drank half a bottle of Brandy (Presidente brandy) on June 5th on an empty stomach, 5 shots the morning of June 6th on an empty stomach, however, I’ve done this before with no problem. I decided to try gin (Seagram’s Extra Dry Gin) for the first time the night of June 6th (my drink was not poisoned, I was the only one handling the bottle since purchase). They day this happened I ate at a Japanese restaurant and consumed teriaki beef with sushi. I also bought some extra spicy Japanese beef jerkey from a Japanese "cafe place", which wasn’t too clean looking (the jerkey came out of a plastic tub) but I’ve eaten both things from both places before.
Nothing happened after a few drinks, but after half the bottle of gin, I got the need to keep catching my breath. I stopped and the next day I woke up to the same sensation with a tickle in my windpipe/trachea. I also had extreme diarrhea for about a week that eventually resolved, but my stools have not been the same since. When I pass them, they have "particles" floating around (imagine a bit smaller than snow flakes in a snow globe). When I flush, more particles wash off these and momentarily before they go down, it looks like a "cloud" billows around them, like flour in water. They are also very yellow and softer. Whereas before, I would pass firm, healthy bowel movements with none of this "powder" and in much larger quantities as well more frequently.
Just a week after this I started having panic attacks and extreme anxiety (NEVER had this before). I also have no history of STDs and my gf is clean.
3 weeks later the symptoms continued and I developed a lump in the throat sensation and difficulty swallowing (pills were fine same with water and solids, but "fine rough" foods like carrots or dry bread were annoying). I could swallow, it just didn’t seem as effective, I had to often swallow twice and chew more.
The pain increases when I take a deep breath and feels like the throat tightness you get after running for a long time. Around Julyish the shortness of breath decreased, I still couldn’t (and can’t) get a satisfying deep breath without getting the throat irritation, although it comes occasionally and more often. I can get a full deep breath, but it doesn’t "feel" like it.
Around late July I started developing constant burping and a lot of flatulence. The burps seem forced like excess gas. They "roll out" and my stomach often can expel gas without a burp, which leads to a loud internal sound that is audible for all to hear. Sometimes it’s like a trapped burp that results in a bloating sensation.
I feel the pressure well up in my stomach and the burp is sometimes more like a hiccup without a real large burp. I started to get constant bloating (like I had eaten a huge meal) even after small meals or an empty stomach. The burping always happens in an upright position and never when lieng down, although when I lie down I can sometimes hear gas travelling up in small bubbles like a pressure valve…which eventually becomes a burp when I sit up.
I developed a sour taste in the back of my mouth but it is not consistent with the burps and it is not acid. I have a thick tongue coating that changes color based on what I eat but it usually white/yellow, it came on a few weeks into this problem. If I scrape it off w/ my teeth, the sour taste is less.
Around August 14thish I developed a sore throat, it occurs whenever I lie down and goes away when I get up. There is no acid or reflux associated with this at all.
The symptoms are a lot better in the morning and progress throughout the day. Sometimes the tickle will wait a good hour or so before coming on. I sometimes get a heat sensation around the throat but the tickle goes away when this happens.
Now for what I’ve done about it: I’ve gone from specialist to specialist. Had negative EKG’s, barium swallows, blood tests, liver/gallbladder ultrasounds, Chest X-Rays, pulmonary lung function tests, allergy medicine trials and blood tests, antacid, h2 blocker, and PPI medicine trials. I even had an endoscopy that was negative aside from a small sliding hiatal hernia 3-4 cm that was said to be too small to cause any problems, and there was no irritation or inflammation found. I also went to a naturopathic chiropracter who specialized in visceral manipulation, he said the hernia could not even be felt and he specializes in moving them down.
The throat irritation is constant, so I’ve been to an ENT who scoped my throat with a laryngoscope and saw no irritation on the vocal cords or trachea at all, even though talking someties aggrevates it. I’ve had a thyroid ultrasound as well.
They thought it could be psychological and put me on ativan, that did nothing but make me feel high/drunk
